White Oak vs Walnut: Picking Your OKC Dining Table Wood

If you have ever walked into our shop in Oklahoma City and stood between a stack of white oak and a stack of black walnut, you know the feeling. Both woods are beautiful. Both make dining tables that last for decades. But they are different in ways that matter at your dinner table every single day. After years of building custom dining tables right here in OKC, here is how we help customers choose.

White oak: the workhorse

White oak is the shop favorite for a reason. It is hard, dense, and shrugs off daily use. The grain runs straight and steady with that classic cathedral pattern in flat-sawn boards, and it takes finish beautifully whether you like it natural, warmed up with a little color, or even darkened down.

Here is the practical side: white oak hides a multitude of sins. Small dings from kids' homework sessions, the occasional bump from a chair leg, general everyday life, white oak forgives most of it. It is a lighter wood overall, which means it keeps a room feeling open and bright. If your dining room does not get a lot of natural light, that is worth thinking about.

We mill a lot of white oak in-house on our own sawmill, and we run it through our vacuum kiln right here at the shop so it is dried slow and stable before it ever becomes a table. A stable slab is the difference between a table that stays flat and one that does not.

Walnut: the showpiece

Walnut is the wood people fall in love with at first sight. The color is rich and deep, ranging from chocolate brown to lighter honeyed tones, sometimes with streaks of both in the same board. The grain can be straight and elegant or wild and swirly, and book-matched walnut slabs are about as striking as a tabletop gets.

Walnut is slightly softer than white oak, but do not let that scare you. A properly built walnut dining table with a good finish handles daily life just fine. Where walnut wins is character. If you want the table to be the centerpiece of the room, the thing guests comment on the minute they sit down, walnut is hard to beat.

One honest note: walnut does darken and even out in color as it ages, especially in sunlight. Most people consider that part of the charm. It is a living material, and it settles into itself over the first year or two.

Dimensional lumber lets us glue up clean, precise panels in any size you need. Both work in either species, and we will show you real slabs and boards from our retail lumber stock so you can see the actual grain of your future table, not just a photo of someone else's.

A word on our process

Every dining table we build starts as rough lumber, much of it milled right here in our shop and dried in our own vacuum kiln. We flatten it on the CNC, joint and glue the panels, and finish it with products we have tested and trusted for years.
